There's no "best" enchantments, but there is a list for each enchantment listed on the enchantment shop page.

I'd say, just go with whatever gives the highest boosts for a "perfect" playthrough.

For example, Val gains +85 Stamina if you pick the Endurance upgrade, while picking Defense for Ashley gives her +200 HP and Sarah prefers the Attack upgrade (+affection and +15 Power).
